Pretty much sums up my weekend.
A co-worker of mine, who is a great cook, told me how she makes her dumplns’, so I thought I would give it a whirl. Well, a few cups of flour and some water later, I had nothing but a sticky, gooey mess. Frustrated over my failed attempt at making one of my favs, I dumped the goop out the back door.
Time to move to plan two. Luckily, I had a can of biscuits in the fridge, so I pulled them apart, rolled them out and simmered them in my broth from my chicken. They turned out okay, but had a hint of canned biscuit taste to them. Hub thought they were great, C wouldn’t try them, and L wouldn’t give an opinion either way. He ate a few, but I don’t think he cared for them. Does anyone have a fool-proof dumplin’ recipe they would like to share?
Moving to Saturday…….M & J had a track meet at Paducah Tillman on Saturday. It was supposed to start at 10:00, so we were up fairly early to make it there. An hour and a half later, it finally started at 11:30. It was very chilly, but that didn’t keep me from getting very crispy. The tops of my feet and my legs are burnt to a crisp. Actually my feet are blistered. I can hardly move. After the track meet, hub took me to a Carribean place called Flamingo Row to eat. The food was great. The atmosphere made me want to go back to Jamaica. Hopefully I can talk my BF and her crew into going there next summer! After we ate, we went to Wal-mart to look for C some baseball socks, a bat bag and a batting helmet. Since he is so small, our Wal-Mart never had them little enough to fit him. Once we were through with W-Mart, we went to the mall. I wanted to get his helmet airbrushed and I had a pair of shoes to return. We also needed to look for L a fisherman’s hat because for the past few days, everytime he gets in the sun, his face breaks out in whelps. When I was his age, I couldn’t play outside for the same thing. Bummer for him! We found L’s hat, C a bat bag and I found a pair of pants I’d been spying for some time…the best thing, they were marked to clearance for $12, so I couldn’t pass them up. We didn’t get home until 7:30.
Today, it was my turn to be in the nursery at church. We came home afterwards rather than going out to eat with friends because I am so miserable from the sun burn. I am trying to catch up on my laundry because after the cooking disaster on Friday, I was simply too lazy to start washing clothes and I didn’t have time yesterday. So, mounds of laundry is calling.
The next week is just about as crazy as before. Tuesday, older kids have track, C has t-ball. Wednesday is church and Team-Kid. Thursday hub works a 24-hour shift and C has a t-ball game at 7:50pm. Waaaay to late for a 4-year old if you ask me. Friday, our weekend for the kids.

I also make a different version, which is more like chicken pot pie but with a dumpling topping. I just remove some of the broth and add some cornstarch to thicken, then add the dumplings and cook them. It’s really good! If you try it let me know, I’d love to hear how you like them

I am not a dumplin’ person. Love to eat them but I’ve never made them. I do have a good recipe that you fake it by using cream of chicken soup and flour tortillas. It is REALLY good but not exactly the same.

, but my mom’s aunt made the best dumplins ever!!!! Now, mom’s cousin makes them every time we have a family get-together. Sydney now loves them too. My week is looking fairly busy – work, ballgames, and choir practice with Carter Creek because my uncle asked me to sing with them for an upcoming associational event. Although, I am off tomorrow (scheduled that way for some reason?) and I plan to do a little catching up! Love ya!
